A very large spinach salad with air fryer done chunks of chicken strips, sliced boiled eggs, grated extra old cheddar cheese salad dressing and whatever else the boss wants to toss in tonight. The big Christmas dinner is tomorrow.

I will soon get the smoker ready for a 4-pound chuck roast using hickory that been water soaked for a day. The plan is to get the meat to 200 degrees and well-endowed with smoky goodness. It's been laying in a pan basking in rub for 24 hours.

Tonight will be a time of family coming together for a meal after Christmas Eve services at the small local gathering I have attended. I have been asked to read Luke's account to his associate Theophilus of what had taken place as he understood it from primary sources sometime before the end of the first century.

Besides the smoked beef, I am also contributing large amount of requested ice cream. :cool:

Our Christmas dinner for two will be an oven done bone in ham with pineapple rings, mashed spuds seasoned with wasabi, air fryer done asparagus and pumpkin pie with cool whip for dessert.
