Bacon sandwiches today, with potato salad from the local deli.

I have a friend who is a copper, if he is ever in the area he calls in for a chat, cup of tea first as I make him a bacon sandwich, I once asked him how he liked his bacon, the answer was a single word 'Cremated'.

I swear that if I put these inside a bun with some tomato ketchup he would be none the wiser

Yes! Cremated! 🤣

I buy very thin bacon and cook in large shallow pyrex dishes at 320F in the lower convection oven. I pull them out and flip them about every 10min or so, then carefully pat them dry after they're properly cremated.

I have never seen those bacon fries before. I’ll have to keep an eye out!

They’re so uncommon here in the US. It’s rare to find them in restaurants. My grandmother made an odd version-and maybe there’s a different name for it-she basically made a beef pot roast and added carrots, peas, potato, and onion. Then she’d ladle that into a large shallow pyrex and cover with homemade buiscuits. She’d bake the whole thing and the buiscuits would fluff up. I’ve never tried to make it. 😞

Rotisserie chicken with leftover potato salad this evening.

They’re so uncommon here in the US. It’s rare to find them in restaurants. My grandmother made an odd version-and maybe there’s a different name for it-she basically made a beef pot roast and added carrots, peas, potato, and onion. Then she’d ladle that into a large shallow pyrex and cover with homemade buiscuits. She’d bake the whole thing and the buiscuits would fluff up. I’ve never tried to make it. 😞

Your grandmother's version sounds pretty much like many of the spin offs here. People use different cuts of meat - the main one being mince here - but it has started to have slow cooked pieces of beef used now especially in restaurants. We've settled on one particular recipe now here which is pretty basic and works for beef mince and lamb mince to switch it to a shepherd's pie. You could easily switch out the mash potato topping for biscuits.

More than happy to send it if you want to give it a go. It won't be the one you remember but it might evoke nice memories 👍

Maybe I’ll just make a beef stew one of these days and top it with tube breakfast biscuits, and see if that takes me back. Laziness is really the only thing stopping me.

I just remembered, she used to call it Shepherd’s Pie. I’m sure she probably got it from Bettie Crocker or Better Homes and Gardens New Cook Book.

The wife requested pot roast this weekend so I’ll be halfway there in a few days. I think that picture of perfectly broiled mashed potato just set me off. Ultimate comfort food! ☺

Here we tend to think of Shepherds pie as lamb and cottage as beef. Lamb mince or shoulder is common - mince mainly as lamb costs a fortune here now.
