My problem is that I like potatoes, I have yet to find any form of cooked potatoes that I don't like, I even like to buy different varieties just because I can. A few years ago I bought some Idaho potatoes, just two potatoes cost me £2, okay they were as big as your hand, but at the time I could buy 56lbs of Lincolnshire Reds direct from the farmer for £3, keep 10lbs for myself and give the rest away.
These Idaho potatoes, I had them baked in the oven, were in a different league, an amazing taste, very hard to find in England obviously but if you can give them a try.
I haven't bought instant potatoes for 40 years, remember Smash?
But, just out of curiosity, if you see these Idahoan potatoes on the shelves, give them a try, you might be surprised, even if you only serve it up to the grandchildren with sausages
