Also my understanding,I spent a little time in Italy in the past and was told, by someone who knew extensively about food that nobody makes their own pasta anymore, apart from Ravioli and that many, many restaurants just use Barila dried pasta (apart from making their own Ravioli)
They also said the tales of getting up at 6am to make the fresh pasta for the day ahead is just a tale for Tourist's.
A relative has an Italian restaurant and they buy everything in, even some sauces.
