Favourite cooking oil

Although both EVO and VOO can degrade with heat they do not as is often implied become completely devoid of nutritional value or for that matter flavour, the only way I'd consume rapeseed oil is if it's disguised with sesame oil or in my diesel as biofuel. :)

I use rapeseed oil for most frying purposes and also smear on steak prior to griddling as I prefer it's capacity for using at high temperature. As someone already said, virgin olive oil is wasted for frying.
I've just started to use this but find it spits a lot, more than most other oils at the same temperatures.

I did run out one day so used Grapeseed oil that I use for soap making. Very nice light tasting oil which I would use again. Reading the posts above got me thinking about the temperature of this oil and a quick search says that it has a high smoke point which is good.

Has anyone cooked with coconut oil?

We use EVO oil almost exclusively for cooking (habit) but we do have a bottle of vegetable oil for cake baking since EVO oil has a stronger flavor.
For high-heat frying (or roast potatoes) we use lard since it's the most stable at temp and has neutral flavor.
I've read that flaxseed oil is the absolute best for seasoning cast-iron pans.

Yes Darron, regularly. I find it to be a very clean and non greasy oil. I mostly use it for the like of chicken breasts or eggs, where I prefer the texture and flavour. Great for stir frying too.
Might have to give this a go. "What do you mean, you used all the coconut oil for frying so there's no 1912 in stock!" :roflmao:

Don't give me ideas Gordy, though Cashmere Cooking Oil does have a certain ring to the name. :)
 
I only use coconut for cooking. For any dressings I use olive oil made from my parents trees. I rarely fry anything these days though.

Love a bit of sesame oil for basting cuts of meat but I wouldn't use it to fry with. I use Lard for frying but barely a sliver - Can't stand greasy food and prefer to grill given the option....except for liver or black pudding.

I like them fried but a little dry. Just enough fat so they don't burn.

The moisture comes from the brown sauce splashed on for black pudding. Chilli sauce for liver:happy:

I used to consider myself a respectable cook, but this thread has opened my eyes!

I always used EVO for almost everything. Looks like I need to educate myself (I feel an oil spending spree coming on!)

Grass fed butter for low temp. Animal fats / dripping from our own cooked meats also used. Coconut for everything else.
You wouldn't find rapeseed etc in our cupboards :eek:

Interestingly, despite all the claims of almost every heart / health authority, there isn't a single clinical study linking saturated fat to heart disease etc. Just saying :okay:
