Tea is to wonderful for one set formula. I buy mine from Harney and Sons ( is it O.K. to post ) and have almost as many varieties as shaving soaps.
I own three British Brown Bettys, a sterling strainer, cream and sugar and mote spoon ( look that one up) a pair of pre war Addersley cups with saucers, desert plate and serving plate and a Simplex copper teakettle for western tea, a Samovar and a formal Japanese tea service. I have a small library of reference books and recipes for cakes and biscuits.
I will bore you with two tea stories.
I was stationed in San Francisco after flipping my lifeboat ( USCG) on the Oregon Coast. I had light duty after a further 'incident' off the Golden Gate Bridge and was driving recruits to various medical exams all over the bay area. I had LOTS of time between the return trip and explored that great city.
The Japanese Garden in Golden Gate Park is my favourite place on earth. I'm standing before the bronze Buddha in full dress uniform in the morning fog.I feel a tug on my arm, look around and finally down. This elderly Japanese lady in full on traditional kimono is standing there with two lotus flowers and gives me one. We put them on the Buddha as offering. She then gestured me to the teahouse and performed my first tea ceremony. We bowed and left never speaking a word.
Decades later I am working part time for my English friend and mechanic David. I was the only American familiar with starter buttons, non synchro gearboxes, RHD and explaining to LUCAS Laird of Darkness electrics if they didn't cooperate I'd take a irish screwdriver to them. A customer came in very upset, her big Jaguar saloon towed in with a crushed fender and torn wheel hub assembly (trophy wife in a trendy Range Rover sucking on a latte' and talking on her phone.) At that very moment we heard a large growl and a dragonwing shadow pass overhead. looking up we saw one of the Spanish built HE 111s ( we have many ww2 warbirds hangered at two local airports) right above us. She burst into tears, physically shaking and it was all we could do to get her into a office chair. She had been bombed out of the East End as a child. I had assembled a tea mess, tired of paying for fancy STARBUCKS coffee. I made her a cuppa and plate of digestives. It was more effective than any sedative on the planet.
