I just had a reminder of what bacteria can lurk in food. Up all night with a terrible stomach and feeling quite weak today, which happens to be my birthday so celebrations around eating cancelled. I roasted a chicken yesterday and I'm pretty sure some campylobacter on the raw chicken must have transferred to something as I was preparing it, and then I must have ingested it somehow.

A lesson that it's not just how long you cook food, it's what raw food touches on its way to your table and how that can spread round your kitchen in an invisible way.

Feeling much better. Industrial decontamination of my kitchen taking place!!! Not feeling like roasting another chicken for a while. The supermarket ones aren't very nice anyway, and you have campylobacter to contend with. It's there in most chickens - what varies is the strength. The FSA limit is 7% over 1000 cfu per gram. I bought mine in Tesco and might have fallen in the unlucky 5%. Doesn't say how far over 1000 units you can go.

We’re simple people here up North. Give us a side of a half rotten trout (rakfisk), some onion and beets, lefse and flatbread, sour cream, proper butter, beer and an aqua vita — what more do we need? (Especially after the Christmas table’s excesses...).

Quality time with the missus on Boxing Day.
