This is Filipino-style roasted pork belly, which is a favorite celebration meat dish. Ordinarily it's a whole roasted pig, but you can use just the belly if you're in a smaller house or apartment and don't have the back yard setup to properly roast a whole pig.

The recipes for this are many, but they involve aromatics including onion, garlic, and lemongrass stalks, along with salt and whole peppercorns and bay leaves.

The meat is baked in the oven at 300ºF for three and a half hours. You have the skin side up for the first two and a half hours, then flipped over for the next hour. After that, flip it back to skin side up and turn the heat up to 450ºF to finish for another twenty or so minutes. This will give the skin a terrific crunch! The meat, however, practically melts in your mouth. You can have it with rice and vegetables, and optional lechon sauce for added moisture.
