This horsey arrived late yesterday afternoon. It was cleaned and used this morning for today’s shave. I will use it every other shave for a week or so and will file a report at the end of the trial.
Black horsehair is used for fiddle bows and is more resilient. Congratulations. Our Australian learned friend doesn't know horse manure from good apple butter.

I couldn't find this knife anywhere in the UK, so I gave Richard from Heinnie Haynes a call. Less than a week later, from the US, it's with me, a beautiful Microtech Santoku DLC in M390MK, I have already reprofiled the edge, giving it a 12-degree angle, overall angle 24 degrees combined at the apex. Looking forward to using the knife in the kitchen this week.

Any recommendations for a serrated long bladed bread knife? Mine has a soft feel plastic composite handle and the soft feel has gone tacky to the touch. I assume UV has got the better of the composite clad handle. I’ve been looking at potentially at metal handled replacements Global have the GN-004 NI 23cm Bread Knife, but I’m happy to look at other makes. It’s only real job is to hack through very crusty sourdough bread.

Any recommendations for a serrated long bladed bread knife? Mine has a soft feel plastic composite handle and the soft feel has gone tacky to the touch. I assume UV has got the better of the composite clad handle. I’ve been looking at potentially at metal handled replacements Global have the GN-004 NI 23cm Bread Knife, but I’m happy to look at other makes. It’s only real job is to hack through very crusty sourdough bread.

There are many good options out there, including the knife you mentioned, the Global brand. I like the look of this knife myself.

We use Wusthof Classics and Wusthof Epicure at home. No complaints. Nice build quality and rust resistance.

Global make gorgeous knives as well. I’ve seen a lot of Global in commercial kitchens, including the test kitchen at the company I last worked for.
