I recall trying to get 1 pass shaves when I first started shaving and I was even thinking north to south over my entire face and neck was my true WTG lol. Then I mapped my beard and was shocked how many directions I had growth on my cheeks, jaw and neck.

Same. Below the chin my beard has a lightning strike shape up the centre where the hair goes in all directions, then it breaks almost horizontal from nose to ear. As a result, I cannot go WTG with a straight razor, only XTG, which might explain why I can get an acceptable 1 pass shave, 'cos it's always XTG.

Given how much stubble remains after single WTG pass, I can't leave it at that. It's almost as though I haven't shaved.

Yes, one pass wtg and I'm done! I'm not bbs shaved when I finish but I can live with that.

Really depends on the razor for me. For example the Mamba requires 3 passes, whereas the BBS-1 can be done in one. I prefer 2 passes.
